Controlled Atmosphere — How It Works
Controlled atmosphere (CA) storage extends shelf life by reducing oxygen levels inside sealed storage rooms to 1–3% (compared to 21% in normal air) while managing CO₂ concentration. At these low oxygen levels, the respiration rate of fruit and vegetables drops dramatically — slowing ripening, reducing weight loss, and preserving texture, colour and nutritional value for months rather than weeks.
